Thermocouples measure temperature based on voltage potential. They consist of two dissimilar electrical conductors that are joined in electrical junctions. When the junctions are at different temperatures, it produces a temperature-dependent voltage as a result of the thermoelectric effect, and you can interpret this voltage to measure temperature.
